  • 1 cup long-grain rice
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup bell peppers, chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 green onions, chopped
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat and add a splash of oil.
  2. Sauté chopped onions and bell peppers for about 5 minutes until softened.
  3. Add ground beef, cooking until browned and crumbled.
  4. Stir in rice, cumin, and chili powder to coat the rice evenly.
  5. Add diced tomatoes (with juice) and rinsed black beans; mix well.
  6. Pour in water to cover ingredients by about an inch. Bring to a boil, reduce heat, and cover; let simmer for about 20 minutes until rice is tender.
  7. Sprinkle shredded cheese on top; cover briefly until melted before serving with green onions.
