  • 1 pound ground turkey
  • 1 cup lentils (green or brown)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups chicken or vegetable broth
  • Dried thyme, cumin, salt, and pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion until softened; add minced garlic and cook for another minute.
  2. Add ground turkey to the pot and brown until no longer pink.
  3. Stir in the sliced carrots and chopped celery; cook until they begin to soften.
  4. Add lentils, diced tomatoes (with juices), broth, thyme, cumin, salt, and pepper; bring to a boil.
  5. Reduce heat to low; cover and let simmer for 30 to 40 minutes until lentils are tender.
  6. Taste and adjust seasoning if needed before serving hot with fresh parsley.
