  • 1 medium head orange cauliflower, cut into florets
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp curry powder
  • 1 bell pepper (any color), sliced
  • 1 cup canned chickpeas, rinsed
  • Juice of 1 lemon
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss the cauliflower florets with olive oil, garlic powder, curry powder, salt, and pepper until evenly coated.
  3. Spread the seasoned cauliflower on the baking sheet and roast for 25-30 minutes until golden brown.
  4. In the last 10 minutes of roasting, add sliced bell peppers to the baking sheet.
  5. In serving bowls, layer roasted cauliflower and peppers with rinsed chickpeas. Drizzle with fresh lemon juice and garnish with chopped herbs before serving.
