  • 2 cups sharp cheddar cheese, shredded
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • 1/4 cup gluten-free flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. Cook the gluten-free pasta in salted boiling water until al dente; drain and set aside.
  3. In a saucepan, melt butter over medium heat; stir in flour to create a roux. Gradually whisk in milk until thickened (about five minutes).
  4. Remove from heat and stir in cheddar cheese until melted; season with salt, pepper, and paprika.
  5. Combine the cooked pasta with the cheese sauce; transfer to the prepared baking dish.
  6. Mix breadcrumbs with Parmesan cheese; sprinkle over the mac and cheese. Bake for 25–30 minutes until golden brown.
