  • 1 medium head cauliflower (about 1.5 lbs), cut into florets
  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts, toasted
  • 1/2 cup freshly grated Parmesan cheese
  • 3 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a food processor, blend the basil, toasted pine nuts, garlic, lemon juice, and Parmesan cheese. Gradually add the olive oil until smooth.
  3. Toss the cauliflower florets with half of the pesto in a large bowl until evenly coated.

  5. Drizzle the remaining pesto over the roasted cauliflower and sprinkle with additional Parmesan before serving.
