  • 2 cups ripe peaches, sliced (fresh or thawed frozen)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp olive oil
  • 2 tbsp cornstarch
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup seasoned panko breadcrumbs
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, sauté the diced onion in olive oil until translucent (about 5 minutes).
  3. Add minced garlic and bite-sized chicken pieces; cook until browned on all sides (8-10 minutes).
  4. Stir in peach slices along with salt and pepper; cook for an additional 2 minutes.
  5. In a bowl, combine sour cream and cornstarch until smooth; mix this into the skillet with shredded cheddar cheese.
  6. Transfer the mixture to a greased baking dish, top with breadcrumbs and additional cheese if desired.
  7. Bake for 30-35 minutes until bubbly and golden brown.
