  • 3 lbs bone-in short ribs
  • 1 cup pear butter
  • 1 large yellow onion, chopped
  • 4 cloves fresh garlic, minced
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the onions and garlic finely. Let short ribs sit at room temperature for 30 minutes.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear short ribs on all sides until browned (3-4 minutes per side). Remove from pot.
  3. Sauté onions in the same pot until translucent (about 5 minutes), then add minced garlic until fragrant.
  4. Pour in beef broth and stir in pear butter to create a sauce. Return short ribs to the pot.
  5. Cover and reduce heat to low, braising for 3 hours until fork-tender.
  6. Let rest for 10 minutes before serving. Garnish with fresh thyme.
