  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1.5 cups long-grain jasmine rice
  • 2 cups low-sodium chicken broth
  • 1 cup fresh cilantro leaves
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 medium green bell pepper, chopped

Instructions

  1. Gather and chop all ingredients.
  2. In a bowl, mix soy sauce, lime juice, minced garlic, and cilantro. Marinate chicken in the mixture for at least 30 minutes.
  3. Rinse rice under cold water until clear; toast in a pot over medium heat for a few minutes. Add chicken broth, bring to a boil, then cover and simmer for 15–20 minutes or until fluffy.
  4. Heat oil in a skillet over medium-high heat and sear marinated chicken for about 5 minutes on each side until golden brown.
  5. Blend cilantro, green bell pepper, garlic, lime juice, and salt until smooth to create the green sauce.
  6. Slice chicken and serve over rice with green sauce drizzled on top.
