  • 9 lasagna noodles (no-boil or cooked al dente)
  • 2 cups ricotta cheese (whole milk preferred)
  • 3 cups shredded mozzarella cheese
  • 2 cups pierogi filling (potato and cheese)
  • 1 cup marinara sauce (homemade or jarred)
  • ½ cup grated Parmesan cheese
  • Fresh herbs (basil or parsley, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions if not using no-boil.
  3. In a bowl, mix ricotta cheese with half of the shredded mozzarella, and season with salt and pepper.
  4. In a baking dish, spread a thin layer of marinara sauce at the bottom. Layer as follows: noodles, ricotta mixture, pierogi filling, marinara sauce, then more mozzarella. Repeat until all ingredients are used.
  5. Cover with foil and bake for 25 minutes. Remove foil; sprinkle remaining mozzarella and Parmesan on top. Bake uncovered for another 15-20 minutes until golden brown.
  6. Let rest for 10 minutes before slicing.
