  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 1 cup pineapple juice (unsweetened)
  • 1 cup canned pineapple chunks (drained)
  • 2 tsp baking powder
  • ½ cup powdered sugar
  • ¼ cup maraschino cherries (plus juice)
  • 2 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
  2. In a large bowl, whisk together flour, baking powder, and sugar.
  3. In another bowl, mix softened butter, eggs, pineapple juice, and crushed pineapple until smooth.
  4. Gradually combine the wet ingredients into the dry mixture, folding gently to retain air.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  6. Cool the cupcakes before frosting with cherry buttercream made by mixing softened butter, powdered sugar, milk, and maraschino cherry juice.
