- 1/3 cup granulated sugar

- 1 cup fresh raspberries

- 1 tsp vanilla extract
- Powdered sugar (for dusting)
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine flour and cold butter until crumbly. Gradually add ice water until dough forms. Chill while preparing the filling.
- Blend pistachios in a food processor until finely ground. In another bowl, mix sugar and eggs until pale and fluffy. Stir in ground pistachios and vanilla.
- Roll out chilled dough to about 1/8 inch thick; cut circles larger than tartlet pans. Press dough into greased pans, trim edges, and fill with pistachio mixture.
- Nestle raspberries on top of the filling and bake for 20-25 minutes until golden brown. Allow to cool slightly before removing from pans.
