  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (cold, cubed)
  • 1/2 cup shelled unsalted pistachios
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1 cup fresh raspberries
  • 1/4 cup heavy cream (cold)
  • 1 tsp vanilla extract
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour and cold butter until crumbly. Gradually add ice water until dough forms. Chill while preparing the filling.
  2. Blend pistachios in a food processor until finely ground. In another bowl, mix sugar and eggs until pale and fluffy. Stir in ground pistachios and vanilla.
  3. Roll out chilled dough to about 1/8 inch thick; cut circles larger than tartlet pans. Press dough into greased pans, trim edges, and fill with pistachio mixture.
  4. Nestle raspberries on top of the filling and bake for 20-25 minutes until golden brown. Allow to cool slightly before removing from pans.
