  • 2 poblano peppers
  • 2 ripe avocados
  • 12 jalapeño peppers (to taste)
  • 2 tbsp freshly squeezed lime juice
  • 8 corn or flour tortillas
  • ¼ cup chopped fresh cilantro
  • 1 tsp garlic powder
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Marinate the chicken: In a bowl, combine olive oil, lime juice, garlic powder, salt, and pepper. Add the chicken breasts and let marinate for at least 30 minutes.
  2. 2. Char the poblanos: Heat a skillet over medium-high heat and char the whole poblano peppers until slightly blackened. Remove from skillet.
  3. 3. Cook the chicken: In the same skillet, add the marinated chicken breasts and cook for 6-7 minutes on each side until golden brown and fully cooked.
  4. 4. Make the salsa: Dice avocados and jalapeños; squeeze lime juice over them to prevent browning. Mix in chopped cilantro.
  5. 5. Assemble the tacos: Warm tortillas in a dry skillet until pliable. Fill each with sliced chicken, charred poblanos, and top with avocado-jalapeño salsa.
