  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 2 large eggs
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray it with nonstick cooking spray.
  2. In a large bowl, mix pumpkin puree, cream cheese, granulated sugar, brown sugar, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry mixture to the wet ingredients; stir gently until just combined.
  4. Spoon half of the batter into each muffin cup. Add a dollop of cream cheese filling in the center and top with remaining batter. Swirl caramel sauce on top.
  5. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
