  • 1 cup pumpkin puree (canned or homemade)
  • 1/2 cup protein powder (vanilla recommended)
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/2 cup milk (or dairy-free alternative)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together oats, protein powder, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, combine pumpkin puree, eggs, maple syrup, and milk until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; be careful not to overmix.
  5. If desired, add in chocolate chips or nuts at this stage.
  6. Pour the batter into muffin tins about two-thirds full and bake for 20-25 minutes until a toothpick inserted comes out clean.
  7. Allow muffins to cool before enjoying.
