Description

Pumpkin roll is a delightful fall dessert that perfectly combines warm spices with a creamy filling.   • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 8 oz cream cheese (room temperature)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line and grease a jelly roll pan.
  2. In a mixing bowl, blend pumpkin puree, sugar, and eggs until smooth.
  3. Sift flour, baking powder, baking soda, and spices in another bowl. Gradually mix into wet ingredients until just combined.
  4. Spread batter evenly in the pan and bake for 13-15 minutes until golden brown.
  5. Remove from oven, invert onto powdered sugar-dusted parchment paper, and roll while warm.
  6. Beat cream cheese, powdered sugar, vanilla, and optional nuts until creamy. Unroll the cooled cake, spread the filling evenly, and re-roll gently.
  7. Chill for at least one hour before slicing.
