Description

Pumpkin Spinach Lasagna is a delightful autumn dish that combines layers of creamy ricotta, earthy spinach, and sweet pumpkin for a comforting meal. Ingredients

  • 9 lasagna noodles (no-boil preferred)
  • 1 cup pumpkin puree
  • 4 cups fresh spinach
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 cloves garlic (minced)
  • ½ tsp nutmeg
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in fresh spinach until wilted; season with salt and pepper.
  3. In a bowl, mix together ricotta cheese, nutmeg, salt, pepper, and half the parmesan until creamy.
  4. Layer the ingredients in the baking dish: start with pumpkin puree, followed by lasagna noodles, spinach mixture, ricotta mixture, and more pumpkin puree. Repeat until all ingredients are used, finishing with noodles topped with mozzarella and remaining parmesan.
  5. Cover with foil and bake for 30 minutes. Remove foil in the last 10-15 minutes to achieve a golden brown top.
