Not only are they visually stunning, but they’re also a healthy snack option that can be customized with your favorite fruits and dipping sauces.

Ingredients

Scale
  • 8 rice paper wrappers
  • 1 ripe mango, sliced
  • 1 cup strawberries, hulled and sliced
  • 1 cucumber (English), thinly sliced
  • 1/4 cup fresh mint leaves
  • 1 kiwi, peeled and sliced
  • Dipping sauce (peanut or hoisin) for serving

Instructions

  1. Prepare your workstation by gathering all ingredients and tools.
  2. Soak each rice paper wrapper in warm water for about 10 seconds until pliable.
  3. Lay the softened wrapper on a flat surface. In the center, layer mango slices, strawberries, cucumber sticks, mint leaves, and kiwi.
  4. Fold the sides of the wrapper over the filling tightly but gently. Roll from the bottom to form a neat spring roll.
