Description

Indulge in these chewy raspberry and chocolate chip cookie bars, where sweet and tart flavors create a delightful treat perfect for any occasion.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup fresh raspberries
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish or line it with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the eggs one at a time, followed by the vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring gently until just combined.
  5. Fold in the fresh raspberries and chocolate chips without crushing the berries.
  6. Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes or until golden brown on top. Allow to cool before slicing into bars.
