  • 4 medium red bell peppers
  • 1 lb ground meat (beef or turkey)
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Cut tops off red bell peppers and remove seeds. Arrange cut-side up in a baking dish.
  2. In a skillet over medium heat, add olive oil. Sauté chopped onion and minced garlic until onions are translucent.
  3. In a bowl, mix cooked rice, sautéed onion-garlic mixture, ground meat, Italian herbs, salt, pepper, and half of the cheese.
  4. Fill each pepper shell generously with the mixture and top with remaining cheese.
  5. Cover with foil and bake for 25 minutes; then remove foil and bake an additional 10-15 minutes until cheese is bubbly.
