- 4 medium red bell peppers
- 1 lb ground meat (beef or turkey)
- 1 cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 2 tsp Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Cut tops off red bell peppers and remove seeds. Arrange cut-side up in a baking dish.
- In a skillet over medium heat, add olive oil. Sauté chopped onion and minced garlic until onions are translucent.
- In a bowl, mix cooked rice, sautéed onion-garlic mixture, ground meat, Italian herbs, salt, pepper, and half of the cheese.
- Fill each pepper shell generously with the mixture and top with remaining cheese.
- Cover with foil and bake for 25 minutes; then remove foil and bake an additional 10-15 minutes until cheese is bubbly.
