Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, sift together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk vegetable oil, sugar, eggs, buttermilk, vanilla extract, and red food coloring until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until just combined; be careful not to overmix.
  5. Fill cupcake liners two-thirds full with batter and bake for 20-25 minutes or until a toothpick comes out clean.
  6. For the frosting, beat cream cheese and butter until creamy; gradually add powdered sugar and mix well.
  7. Once cooled, frost the cupcakes generously.
