Description

Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 2 drops red food coloring
  • 2 drops blue food coloring
  • 1 tbsp chopped fresh chives or parsley
  • Salt and pepper to taste

Instructions

  1. Boil the eggs in a saucepan covered with cold water. Bring to a boil over medium heat, then cover and remove from heat after boiling. Let sit for 12 minutes.
  2. Cool eggs in an ice bath or under cold running water until completely cool.
  3. Peel the eggs gently under running water to ease shell removal.
  4. Slice each egg in half lengthwise and scoop out the yolks into a bowl.
  5. Mix yolks with mayonnaise, mustard, salt, and pepper until creamy.
  6. Divide the mixture into two bowls; add red food coloring to one and blue to the other until desired shades are achieved.
  7. Fill egg whites alternately with red and blue yolk mixtures using piping bags or zip-top bags.
