  • 12 oz paccheri pasta
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the paccheri pasta in salted boiling water for 10-12 minutes until al dente.
  2. In a bowl, mix ricotta cheese, grated Parmesan, minced garlic, chopped basil, salt, and pepper until well combined.
  3. Drain the cooked paccheri and let cool slightly. Fill each tube generously with the ricotta mixture using a spoon or piping bag.
  4. Heat olive oil in a skillet over medium heat. Sauté additional minced garlic until fragrant.
  5. Gently add the stuffed paccheri to the skillet and toss to coat with garlic oil without breaking them.
  6. Serve hot topped with extra grated Parmesan and fresh basil.
