  • 1 medium head cauliflower, chopped into florets
  • 2 ripe pears, sliced
  • 1 cup quinoa (or farro)
  • 2 tbsp olive oil (extra virgin)
  • 1 tbsp honey
  • 2 tbsp fresh herbs (thyme or parsley), chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC).
  2. Toss cauliflower florets in olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast cauliflower for 25-30 minutes until golden brown, flipping halfway through.
  4. Cook quinoa according to package instructions.
  5. In the last five minutes of roasting, add sliced pears drizzled with honey to the baking sheet.
  6. In a large bowl, combine cooked quinoa with roasted cauliflower and pears. Drizzle with lemon juice and sprinkle fresh herbs before serving.
