Description

  • 4 large red bell peppers
  • 5 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper. Halve the red bell peppers and remove seeds, placing them cut side down on the sheet.
  2. Wrap garlic cloves in aluminum foil with a drizzle of olive oil and place next to the peppers in the oven.
  3. Roast for about 20 minutes until peppers are charred. Peel off any loose skin.
  4. In a blender, combine roasted peppers, garlic, balsamic vinegar, salt, and pepper. Blend until smooth, adding more olive oil or water if needed for consistency.
  5. Adjust seasoning as desired and serve immediately or store in an airtight container.
