Ingredients

  • 1 cup old-fashioned oats
  • 1 cup vanilla protein powder
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey or maple syrup
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup dark chocolate chips
  • Pinch of sea salt

Instructions

  1. In a large mixing bowl, combine oats, protein powder, peanut butter, honey (or maple syrup), and shredded coconut until sticky.
  2. Gently fold in dark chocolate chips and sea salt until evenly distributed.
  3. Scoop out about 1 tablespoon of the mixture and roll into bite-sized balls.
  4. Place rolled balls on a parchment-lined tray and chill in the refrigerator for 30 minutes.
  5. While chilling, melt dark chocolate in the microwave or double boiler until smooth. Dip each ball halfway into the chocolate.
  6. Sprinkle additional shredded coconut on top while chocolate is still warm, then let cool completely on parchment paper.
