  • 4 large flour tortillas
  • 6 large eggs
  • 1 cup diced red bell peppers
  • 1 cup diced onions (yellow or red)
  • 2 cups diced potatoes
  • 1 cup grated cheddar cheese
  • ½ cup salsa
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Chopped cilantro (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes until golden brown.
  3. In a skillet, heat oil over medium heat. Sauté diced onions and bell peppers until softened (5-7 minutes).
  4. Whisk eggs with salt and pepper; pour into the skillet with veggies and cook until just set (3-4 minutes).
