  • 3 lb beef chuck roast
  • 2 medium onions, chopped
  • 6 cloves garlic, minced
  • 1 cup fresh cilantro, chopped (plus more for garnish)
  • 2 tsp ground cumin
  • 24 chipotle peppers in adobo sauce, minced (adjust to taste)
  • Juice of 2 limes
  • 1 cup low-sodium beef broth
  • Salt and pepper to taste

Instructions

  1. Chop onions and mince garlic.
  2. Season the beef chuck roast with salt and pepper.
  3. (Optional) Sear the roast in a hot skillet until golden brown on all sides.
  4. Place the roast in the slow cooker along with onions, garlic, chipotle peppers, cumin, lime juice, and beef broth.
  5. Cook on low for 8-10 hours until tender.
