  • 1 lb lean ground beef
  • 4 medium Yukon Gold potatoes, chopped
  • 2 cups carrots, sliced into thick rounds
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium-high heat until no longer pink. Drain excess grease and transfer to the slow cooker.
  2. Add chopped potatoes, sliced carrots, diced onion, and minced garlic on top of the beef.
  3. Pour in enough beef broth to cover all ingredients (about 4 cups).
  4. Sprinkle dried thyme and add bay leaves; season with salt and pepper.
  5. Stir to combine and cover the slow cooker.
  6. Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  7. Remove bay leaves before serving hot.
