- 1 cup cherry tomatoes, halved

Instructions
- Rinse quinoa under cold water until water runs clear. In a saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes until fluffy.
- While quinoa cooks, chop cherry tomatoes and bell peppers into bite-sized pieces.
- In a large bowl, combine cooked quinoa with black beans, chopped veggies, and cilantro. Stir gently.
- In a small bowl, whisk together lime juice, olive oil, cumin, and chili powder. Drizzle over salad mixture.
