  • 2 cups chopped carrots (about 4 medium-sized)
  • 1 cup red lentils, rinsed
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Prepare the carrots by washing, peeling, and chopping them into small pieces.
  2. In a large pot, heat olive oil over medium heat. Sauté the chopped onions until translucent (about 5 minutes), then add minced garlic and cook for an additional 30 seconds.
  3. Stir in the chopped carrots along with cumin and coriander. Cook for another 5 minutes until slightly tender.
  4. Add rinsed lentils and vegetable broth; bring to a boil while stirring occasionally.
  5. Once boiling, reduce the heat to low, cover partially with a lid, and let simmer for about 20 minutes until lentils are soft but not mushy.
  6. Stir in fresh lemon juice and adjust seasoning as needed.
