  • 1 pound shrimp, deveined
  • 8 oz whole wheat spaghetti
  • 4 cloves garlic, minced
  • 1 tsp red pepper flakes (adjust to taste)
  • 2 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp fresh lemon juice
  • ½ cup reserved pasta water

Instructions

  1. Boil salted water in a large pot. Add spaghetti and cook until al dente, about 8-10 minutes. Reserve some pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes; sauté until fragrant.
  3. Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
  4. Squeeze fresh lemon juice over shrimp and gradually add reserved pasta water to create a sauce.
  5. Toss drained spaghetti into the skillet, mixing well to coat with the sauce. Simmer for another minute.
  6. Remove from heat and sprinkle with Parmesan cheese before serving.
