- 1/2 cup pure maple syrup

- 1 cup jasmine rice
- 2 tbsp fresh lime juice
- 2 tbsp low-sodium soy sauce

Instructions

- Heat oil in a skillet over medium-high heat. Sear marinated chicken for about 6-7 minutes on each side until golden brown and cooked through.
- Pour remaining marinade into the skillet with the chicken; cook for an additional 2-3 minutes until thickened.
- Once the rice has absorbed all liquid (about 15 minutes), remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- Serve chicken alongside coconut rice; drizzle extra glaze on top and garnish with green onions or cilantro if desired.
