  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1/2 cup pure maple syrup
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup jasmine rice
  • 2 tbsp fresh lime juice
  • 2 tbsp low-sodium soy sauce
  • 4 green onions, chopped (for garnish)
  • Fresh cilantro (optional)

Instructions

  1. In a large bowl, combine maple syrup, soy sauce, minced garlic, and red pepper flakes to create the marinade. Add chicken breasts and marinate for at least 30 minutes.
  2. Rinse jasmine rice under cold water until clear. In a saucepan, combine rinsed rice with coconut milk and a pinch of salt; bring to a simmer over medium heat.
  3. Heat oil in a skillet over medium-high heat. Sear marinated chicken for about 6-7 minutes on each side until golden brown and cooked through.
  4. Pour remaining marinade into the skillet with the chicken; cook for an additional 2-3 minutes until thickened.
  5. Once the rice has absorbed all liquid (about 15 minutes), remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  6. Serve chicken alongside coconut rice; drizzle extra glaze on top and garnish with green onions or cilantro if desired.
