  • 1 lb boneless, skinless chicken breasts
  • 34 cloves fresh garlic, minced
  • 1-inch piece ginger, grated
  • 1 medium red bell pepper, diced
  • 23 green onions, finely chopped
  • 8 large butter or iceberg lettuce leaves
  • ¼ cup low-sodium soy sauce
  • 2 tbsp chili sauce (adjust to taste)
  • Juice of 1 lime
  • 1 tsp sugar (brown sugar recommended)

Instructions

  1. Prepare the chicken by dicing it into small pieces.
  2. Heat 1 tbsp oil in a skillet over medium heat. Add the chicken and cook until golden brown (7-10 minutes), stirring occasionally.
  3. Add minced garlic and grated ginger to the skillet; sauté until fragrant (about 1 minute).
  4. Stir in diced bell pepper and chopped green onions; cook for an additional minute.
  5. In a bowl, whisk together soy sauce, chili sauce, lime juice, and sugar. Pour over the chicken mixture and toss to combine.
  6. Remove from heat and let cool slightly. Spoon the mixture into lettuce leaves and serve immediately.
