- 3–4 cloves fresh garlic, minced
- 1-inch piece ginger, grated
- 1 medium red bell pepper, diced
- 2–3 green onions, finely chopped
- 8 large butter or iceberg lettuce leaves
- ¼ cup low-sodium soy sauce
- 2 tbsp chili sauce (adjust to taste)
- Juice of 1 lime
- 1 tsp sugar (brown sugar recommended)
Instructions
- Prepare the chicken by dicing it into small pieces.
- Heat 1 tbsp oil in a skillet over medium heat. Add the chicken and cook until golden brown (7-10 minutes), stirring occasionally.
- Add minced garlic and grated ginger to the skillet; sauté until fragrant (about 1 minute).
- Stir in diced bell pepper and chopped green onions; cook for an additional minute.
- In a bowl, whisk together soy sauce, chili sauce, lime juice, and sugar. Pour over the chicken mixture and toss to combine.
- Remove from heat and let cool slightly. Spoon the mixture into lettuce leaves and serve immediately.
