- 2 cups fresh spinach, chopped
- 1 cup mushrooms (cremini or button), sliced
- 4 large eggs
- 1 cup heavy cream or milk
- 1 cup cheese (Gruyère or cheddar), shredded
- 1 medium onion, finely chopped
- 2 tsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Fit the pie crust into a pie dish.
- In a skillet over medium heat, add olive oil. Sauté onions and mushrooms until golden brown.
- Stir in the chopped spinach and cook until wilted, about 2 minutes.
- In a bowl, whisk together eggs, cream (or milk), salt, and pepper. Fold in the sautéed vegetables and cheese.
- Pour the mixture into the prepared pie crust.
- Bake for 35-40 minutes until golden brown and set in the center. Allow to cool slightly before slicing.
