  • 1 pre-made pie crust (9-inch)
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms (cremini or button), sliced
  • 4 large eggs
  • 1 cup heavy cream or milk
  • 1 cup cheese (Gruyère or cheddar), shredded
  • 1 medium onion, finely chopped
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Fit the pie crust into a pie dish.
  2. In a skillet over medium heat, add olive oil. Sauté onions and mushrooms until golden brown.
  3. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  4. In a bowl, whisk together eggs, cream (or milk), salt, and pepper. Fold in the sautéed vegetables and cheese.
  5. Pour the mixture into the prepared pie crust.
  6. Bake for 35-40 minutes until golden brown and set in the center. Allow to cool slightly before slicing.
