Description

Ingredients

  • 1 sheet puff pastry
  • 4 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup crumbled feta cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/4 tsp nutmeg
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a pan over medium heat, sauté minced garlic in olive oil until fragrant. Add chopped spinach and cook until wilted (about 3 minutes).
  3. In a mixing bowl, combine ricotta, feta, eggs, nutmeg, salt, pepper, and the sautéed spinach. Mix well.
  4. Roll out puff pastry into a greased pie dish. Spoon in the filling and cover with another puff pastry sheet. Seal edges with fingers or fork.
  5. Bake for 25-30 minutes or until golden brown and puffed up. Let it cool for 10 minutes before slicing.
