Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and caster sugar until light and fluffy (about 3 minutes).
- Beat in the eggs one at a time along with the vanilla extract until well combined.
- In another bowl, sift together the flour and baking powder, then gradually add to the wet mixture.
- If using multiple colors, divide the dough and add food coloring until the desired shade is reached.
- Use a cookie scoop to drop dough onto prepared sheets, spacing them apart.
- Bake for 10-12 minutes until edges are lightly golden. Cool on a wire rack.
