  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced
  • 1 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. 1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente (8-10 minutes). Reserve ½ cup pasta water before draining.
  2. 2. Sauté the Veggies: In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté until fragrant (about 1 minute). Stir in cherry tomatoes and zucchini; season with salt and pepper.
  3. 3. Combine: Cook the vegetables for about 3-4 minutes until tomatoes burst. Add the drained pasta, reserved pasta water, and chopped basil to the skillet. Toss everything together until well combined.
  4. 4. Add Cheese: Remove from heat and sprinkle freshly grated Parmesan over the top. Toss lightly to incorporate.
