  • 3–4 boneless, skinless chicken breasts (about 1 pound)
  • 2 medium sweet potatoes (about 1 pound), diced
  • 8 oz wide egg noodles
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 tsp fresh thyme leaves
  • 1 bay leaf
  • Salt and pepper to taste
  • Juice of 1 lemon (optional)

Instructions

  1. Prepare your ingredients by dicing the sweet potatoes, carrots, celery, onion, and mincing the garlic.
  2. In a large pot over medium heat, drizzle olive oil and sautΓ© the onions and garlic until fragrant (3-4 minutes).
  3. Add the chicken breasts and pour in enough chicken broth to cover everything by about an inch. Bring to a boil then reduce heat to simmer.
  4. Once simmering, add sweet potatoes, carrots, celery, thyme sprigs, and bay leaves. Cook until vegetables are tender (about 15 minutes).
  5. Add egg noodles during the last 5 minutes of cooking time; stir occasionally until al dente.
  6. Taste the soup before serving; adjust salt and pepper as needed. Optionally add lemon juice for brightness.
