  • 1 lb lean ground beef
  • 1 packet (1 oz) taco seasoning
  • 32 oz frozen crispy tater tots
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 3 green onions, chopped
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a 9×13 baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, cook the ground beef until browned. Stir in the taco seasoning until fully combined.
  3. Mix in the rinsed black beans until heated through, then spread the tater tots evenly over the beef mixture.
  4. Generously sprinkle shredded cheese over the tater tots.
  5. Bake in the preheated oven for 30-35 minutes until bubbly and golden brown on top.
  6. Allow to cool slightly before garnishing with chopped green onions and dollops of sour cream.
