  • 4 bone-in chicken thighs
  • 2 tsp olive oil
  • 3 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 cup diced carrots
  • 1 cup diced onions
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar

Instructions

  1. Pat dry the chicken thighs with paper towels.
  2. Heat olive oil in a skillet over medium-high heat; sear chicken skin-side down for 4-5 minutes until golden brown.
  3. Transfer seared chicken to the slow cooker.
  4. In the same skillet, sauté garlic for 30 seconds, then add onions and carrots; cook until softened.
  5. In a bowl, mix soy sauce, brown sugar, and chicken broth. Pour over the chicken and vegetables in the slow cooker.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
