- 3 tbsp low-sodium soy sauce
- 2 garlic cloves, minced
- 2 tbsp fresh lime juice
- 1 tbsp sesame oil
- 1/4 cup chopped cilantro (optional)
Instructions
- Cook the rice noodles according to package instructions until tender but firm. Drain and rinse under cold water.
- In a large skillet over medium heat, warm the sesame oil. Add mixed veggies and sauté for about 3-4 minutes until slightly softened.
- In a bowl, whisk together peanut butter, soy sauce, minced garlic, and lime juice until smooth. If too thick, add a splash of warm water.
- Combine cooked noodles with sautéed veggies in the skillet. Pour the peanut sauce over them and toss gently until everything is well coated.
- Remove from heat, sprinkle with cilantro if desired, and serve immediately.
