  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 2 tsp espresso powder
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Beat in eggs one at a time along with vanilla extract until well combined.
  4. In another bowl, sift together flour, cocoa powder, baking soda, baking powder, and espresso powder.
  5. Gradually add the dry ingredients to the wet mixture on low speed until just combined; avoid overmixing.
  6. Using a cookie scoop or tablespoon, drop dough onto prepared sheets about 2 inches apart.
  7. Bake for 10-12 minutes until edges are set but centers remain soft.
  8. Allow cooling slightly before dusting with powdered sugar.
