Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, beat the sugar and eggs until fluffy. Add milk and cooled espresso; mix until smooth.
- Gently fold dry ingredients into the wet mixture until just combined.
- Fill each liner two-thirds full and bake for 18-20 minutes until a toothpick comes out clean. Cool on wire racks.
- For the frosting, whip mascarpone, heavy cream, vanilla, and powdered sugar until stiff peaks form. Pipe onto cooled cupcakes.
