  • 1 cup whole milk (warm)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter (softened)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup dried currants or raisins
  • 2 large eggs
  • 1 cup powdered sugar (for glaze)
  • Water or lemon juice (for glaze)

Instructions

  1. Activate the yeast: In a bowl, mix warm milk with yeast and a teaspoon of sugar. Let it sit for 5-10 minutes until frothy.
  2. Create the dough: Combine flour, cinnamon, nutmeg, remaining sugar, and salt in a large bowl. Make a well in the center; add melted butter, eggs, and yeast mixture. Stir until shaggy.
  3. Knead: Dust your countertop with flour and knead the dough for about 8-10 minutes until smooth.
  4. First rise: Place in an oiled bowl, cover with a damp cloth, and let it rise in a warm place until doubled (1-2 hours).
  5. Add fruits: Punch down the dough; fold in currants or raisins.
  6. Shape buns: Divide into 12-15 equal portions and roll each into a ball; place on a lined baking sheet.
  7. Second rise: Cover again and let rise until doubled (about 1 hour). Preheat oven to 375°F (190°C).
  8. Bake: Bake for 20-25 minutes until golden brown.
  9. Glaze: Cool slightly then mix powdered sugar with water/lemon juice for glaze; drizzle over warm buns.
