- 2 pounds starchy potatoes (e.g., Russets)
- 4 cups finely chopped green cabbage
- 4 chopped green onions
- 1/2 cup milk or heavy cream
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Peel and chop the potatoes into even chunks. Boil in salted water until fork-tender, about 15-20 minutes.
- While the potatoes cook, melt butter in a skillet over medium heat. Sauté cabbage with salt and pepper until wilted, about 5-7 minutes.
- Add green onions to the skillet and cook for an additional 2 minutes.
- Drain the cooked potatoes and return them to the pot. Stir in milk or cream and butter; mash until smooth.
- Fold in the sautéed cabbage mixture until well combined. Season to taste.
- Serve hot, optionally topped with an extra pat of butter.
