Description

Traditional Irish Colcannon is a heartwarming dish of creamy mashed potatoes combined with sautéed greens, perfect for cozy nights or festive celebrations.


Ingredients

  • 2 pounds starchy potatoes (e.g., Russets)
  • 4 cups finely chopped green cabbage
  • 4 chopped green onions
  • 1/2 cup milk or heavy cream
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes into even chunks. Boil in salted water until fork-tender, about 15-20 minutes.
  2. While the potatoes cook, melt butter in a skillet over medium heat. Sauté cabbage with salt and pepper until wilted, about 5-7 minutes.
  3. Add green onions to the skillet and cook for an additional 2 minutes.
  4. Drain the cooked potatoes and return them to the pot. Stir in milk or cream and butter; mash until smooth.
  5. Fold in the sautéed cabbage mixture until well combined. Season to taste.
  6. Serve hot, optionally topped with an extra pat of butter.
