  • 1 cup plain whole milk yogurt
  • 2 cloves garlic, minced
  • 2 tsp smoked paprika
  • 2 tbsp olive oil

Instructions

  1. In a bowl, combine yogurt with minced garlic and season with salt. Set aside.
  2. Bring a saucepan of water to a gentle simmer. Crack each egg into a small ramekin before gently sliding them into the water one at a time. Poach for about 3-4 minutes.
  3. In a small skillet, heat olive oil over low heat and add smoked paprika; sauté until fragrant (about 1 minute).
  4. On each plate, spread yogurt sauce as the base and place poached eggs on top.
  5. Drizzle the warm paprika oil over the eggs and garnish with fresh herbs. Serve immediately.
