  • 1 cup all-purpose flour (unbleached)
  • 1/2 cup unsalted butter
  • 1/2 cup water
  • 1/2 cup ube puree
  • 1/4 cup granulated sugar
  • 4 large eggs (room temperature)
  • 1 cup heavy cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. In a saucepan over medium heat, combine water and butter until melted. Stir in flour until it forms a cohesive ball. Cook for about 1-2 minutes.
  3. Remove from heat; let cool slightly before adding eggs one at a time, mixing well after each addition. Incorporate ube puree for color.
  4. Using a piping bag or spoon, dollop dough onto baking sheets about 2 inches apart. Bake for 20-25 minutes until golden brown and puffed.
  5. While puffs cool, whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  6. Cut tops off cooled puffs, fill generously with whipped cream, replace tops, and dust with additional powdered sugar if desired.
