Ingredients
- 1 cup all-purpose flour (unbleached)

- 1/2 cup water
- 1/2 cup ube puree
- 1/4 cup granulated sugar
- 4 large eggs (room temperature)
- 1 cup heavy cream
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
- In a saucepan over medium heat, combine water and butter until melted. Stir in flour until it forms a cohesive ball. Cook for about 1-2 minutes.
- Remove from heat; let cool slightly before adding eggs one at a time, mixing well after each addition. Incorporate ube puree for color.
- Using a piping bag or spoon, dollop dough onto baking sheets about 2 inches apart. Bake for 20-25 minutes until golden brown and puffed.
- While puffs cool, whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- Cut tops off cooled puffs, fill generously with whipped cream, replace tops, and dust with additional powdered sugar if desired.
