Description

Indulge in this creamy Vanilla Pudding Cake, a nostalgic treat that combines fluffy layers with rich vanilla flavor, perfect for any celebration or cozy gathering.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 2 tsp pure vanilla extract
  • 1 cup whole milk
  • 3.4 oz instant vanilla pudding mix (1 package)
  • Whipped topping (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter until smooth. Gradually add sugar and beat until light and fluffy.
  4. Add eggs one at a time, followed by vanilla extract, mixing well after each addition.
  5. Alternate adding the dry mixture and milk to the wet mixture until just combined; do not overmix.
  6. Gently fold in the instant pudding mix until fully incorporated.
  7. Pour the batter into the prepared baking dish and spread evenly. Bake for 30-35 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool slightly before serving.
