Ingredients

  • 1 head romaine lettuce, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil (divided)
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 3 tbsp nutritional yeast
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400Β°F (200Β°C).
  2. For the dressing, whisk together garlic, lemon juice, Dijon mustard, nutritional yeast, 1 tbsp olive oil, salt, and pepper until smooth.
  3. Pat chickpeas dry and toss them in remaining olive oil with salt and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.
  4. In a large bowl, combine chopped romaine lettuce with any additional veggies you prefer.
  5. Drizzle dressing over the greens and toss gently to coat.
  6. Top with roasted chickpeas before serving.
