- 1 medium yellow onion, chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 cans (14.5 oz each) whole peeled tomatoes
- 1 can (13.5 oz) full-fat coconut milk
- 2 cups fresh spinach or kale
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- Salt and pepper to taste
- Juice of 1 lemon or lime
Instructions
- 1. Heat oil in a large skillet over medium heat. Sauté the chopped onion until golden brown, about 5-7 minutes.
- 2. Add minced garlic and grated ginger; cook for another minute until fragrant.
- 3. Stir in cumin, coriander, turmeric, and canned tomatoes; simmer for about 10 minutes until thickened.
- 4. Add chickpeas and coconut milk; reduce heat and simmer for another 15 minutes.
- 5. Fold in spinach or kale until wilted. Squeeze lemon juice over the top before serving.
